If my reaction to a given recipe or dish is “that’s a mess”, that can certainly be taken as a high compliment. , and shows a touch of perversion, but also that the dish in question is very tasty. And port wine cheese mashed potatoes, or “cheese ball potatoes” for short, are a definite mess.

I hesitate to call this a “recipe”. That’s because, aside from condiments and garnishes (all of which are chosen by the dealer), there are only two real ingredients. Yukon Gold Potatoes and Port Wine Cheese Spread.

For those unfamiliar with port wine cheese, it’s a processed cheese spread made with cheddar, several different types of whey, cream, and (obviously) port wine (and food coloring). I don’t feel much, but I feel a slight sweetness with a zesty and sharp cheese flavor. If you’re familiar with port wine cheese balls, you know what I’m talking about.

I wish I could say it took some trial and error to get this recipe right, but it really didn’t. My concern was soon proved unfounded.   • 2 pounds of mashed potatoes
  • 6 1/2 oz (1 tab) or port wine cheese spread
  • Salt and white pepper (regular pepper if you have it)
  • Garnish: whatever you like on the cheese ball. Leeks, chives, fried garlic, bacon bits, and even toasted nuts all work.

Bring a large pot of plenty of salted water to a boil and cut the potatoes into 1 1/2-inch chunks. Cook until mashed easily with a fork, about 15-25 minutes. Place the potatoes in a colander and give them a quick rinse in warm water to remove excess starch (this will keep the potatoes from getting soggy while stirring the port wine).

Press potatoes into ricer or food mill, then add port wine cheese and stir with a large wooden spoon until potatoes are evenly orange. Taste and season with white pepper if desired. Transfer the potatoes to a bowl and garnish with your favorite cheese ball topping. Serve immediately.
