I’m a terrible gardener, but I still managed to grow a lot of (very small) tomatoes. This is a bit tragic, as is my favorite sandwich base (tomato sandwichmade with mayonnaise, tomatoes, salt and pepper, it is that).
Usually, when faced with such a bounty, I make a grated tomato cherry tomato toastA little tomato toast is very good, but a layer of labneh or cottage cheese isn’t as filling as a breakfast sandwich with a fried egg. So I decided to combine the two and grated a small, flavorful tomato on top of the fried egg and cheese.
It’s pretty perfect.
To make this sandwich, toast two slices of white bread, remove one, and top the other with sliced cheese (sharp cheddar or white American). Bake and brown the cheese until it’s bubbly, then swipe a thick layer of mayonnaise on the uncheeseed slices.
Grab the stem part of the tomato and grate it directly on top of the grilled cheese (this will keep the juices from soaking into the bread). Add small bumps of skin there. Slide eggs of your choice onto the mayonnaise side and season with salt and pepper.
