Spicy peanut and pumpkin soup

Besides being very tasty, this soup is very healthy. Pumpkin is rich in vitamin A, which boosts immunity. Peanut butter is a great source of vitamins and minerals, but it also adds flavor to your dishes. Coconut milk contains good fats and mellows the heat of chilies. It also has nutritional benefits. It’s very easy to make and very hard to stop making again.

1 tablespoon coconut oil

1 medium onion, peeled and diced (about 1 1/2 cups)

4 cloves of crushed garlic

1 ginger (1 inch piece), peeled and chopped

1 chilled scotch bonnet, habanero, thai chili, jalapeno

2 cups pumpkin puree (raw) or 1 can (14 ounces) pumpkin puree

3 cups water or chicken or vegetable stock

canned coconut milk (13 oz)

1/3 cup unsweetened natural peanut butter

2 tablespoons fresh chives, sliced

2 tablespoons crushed peanuts

Yogurt or coconut cream (optional) 1/4 cup salt

1 Heat the oil in a large pot over medium heat. Add onions, garlic and ginger. Cook and stir until softened and beginning to brown, about 4 to 5 minutes.

2 Add chilies, pumpkin puree and water or dashi stock.

3 When it boils, reduce the heat to low.mix
Occasionally, 15-20 minutes until slightly thickened.

4 Put coconut milk and peanut butter in a pan.

5 Using an immersion blender (or working in batches with a standing blender), puree until smooth.

6 Season with salt and place over low heat.

7 Divide the soup into bowls, sprinkle with chives and crushed peanuts, and drizzle with yogurt or coconut cream.

1 Remove stem from pumpkin or butternut squash and cut in half lengthwise.

Scoop out two seeds.

3 Apply oil to the inside.

4 Place cut side down on parchment-lined baking sheet.

5 Roast at 400°F for 40-50 minutes or until pumpkin/pumpkin skin is easily pierced with a knife.

6 Allow to cool until halves are safe to handle, and process the softened pulp in a food processor. Process until very smooth.

Tip: Skip the food processor for this recipe as it will be a puree.
