There are many ways to cook and consume hot dogs and I enjoy all of them. grilled dog, air fried dog, split or spiral dog, Costco dog, or Chili dog. Eat it all. But my heart and stomach have a special place for dirty water dogs.

The Dirty Water Dog is the quintessential and iconic hot dog available from carts on the street. (My childhood favorite dirty water dog cart was run by a guy named George who used to hang out near the Church of Scientology in Los Angeles. Great hot dogs. Interesting place. ), plump, juicy, and steeped in flavor. But you don’t need your own cart or a big vat to give your hot dog a dirty-water vibe.

I made sous vide Before these, though, you don’t need fancy like setups to enjoy this infused candor. An optional pinch of hardening salt if you want to mimic the “extracted nitrates” dogs are exposed to in the bat, and, of course, some hot dogs (just make sure they’re skinless).

  • 1 quart of water
  • 2 tablespoons red wine vinegar
  • A pinch of ground cumin (1/8 teaspoon)
  • pinch of garlic powder
  • a pinch of ground nutmeg
  • A small pinch of hardening salt (optional, to approximate all the nitrites most likely floating in the hot dog water.)

Add all ingredients except the dog to a pot, bring to a boil, and simmer over low heat. Add dogs, cover, and cook for at least 10 minutes. Remove from the heat and place on the manju with your favorite toppings and enjoy. (If you like ketchup, I wouldn’t judge you using ketchup.)
